Lemon Cake

Hi my name is Rowan and this is my Moms recipe for Lemon Cake!

Ingredients:

2 lemons - zested and juiced

2 cups sugar

2 1/2 tsp of baking powder

1/2 tsp of salt

2 3/4 cups of flour

3/4 cup of milk

1/4 cup of lemon juice

1 cup of butter

4 eggs

Preheat oven to 350*f

- Zest and juice lemons - Cream butter, sugar, and zest together till light and fluffy, add eggs to mixture and mix well. Sift flour, baking powder, and salt together then add to mixture. Add milk and lemon juice and mix on medium speed for 2 minuets. Bake in 2 ten inch round pans for about 25 minets or when toothpick comes out clean and dry. While cooling poke small holes into cakes then gently brush the rest of the lemon juice on them. Take cakes out of pans after 8 mins. Pop cakes in freezer and make cream cheese frosting. Then frost and enjoy!!

Tip: If you want to stack the cakes put a layer of frosting between them so cakes are stable.

How to make Cream Cheese Frosting!!

Ingredients:

2 bricks of 8oz cream cheese (philadelphia works best)

2 sticks of butter or 1/2 a cup

6 cups of powdered sugar

2 tsp of pure vanilla extract

Mix cream cheese and butter until well combined. Add 2 cups of sugar. Add vavilla and mix. Add the rest of sugar and combined to desired consistency. Then use a spatula or piping bag to frost cakes.
